Smoked Bacon Cilantro Eggs with Cheddar Scallion Crisp and Sauce Indienne with Smoked Bratwurst n Peppers and Shallot Home Fries






     Molded egg presentations have become popular in recent years.  Molded egg entrees like this are served at few trendy Las Vegas casino buffets.  When breakfast at a Las Vegas buffet looks like a chef's tasting menu, then you know you are in for a treat!

     Cheddar Scallion Crisp: 
     Heat a saute pan over medium low heat.
     Add 1 pat of unsalted butter.
     Add 1/2 of a green onion that is cut into long very thin strips.
     Saute till the onions strips wilt.
     Set the wilted onion strips aside to cool.
     Place 2 1/2 tablespoons of thin grated cheddar cheese in a small mixing bowl.
     Add 1/2 teaspoon of flour.
     Toss the grated cheddar and flour together, so the cheddar becomes lightly dusted.
     Place Place a piece of parchment paper on a baking pan.
     Brush a 5"x 5" area on the parchment paper with melted unsalted butter.
     Scatter some of the wilted green onion strips on the buttered parchment paper.
     Sprinkle a very thin layer of the dusted cheddar cheese over the green onion strips.  The cheese should gaps and spaces where the parchment paper can be seen between pieces of cheese.  The cheese should be sprinkled on the pan, so it is less than 3/16" thick.  An odd shaped crisp with uneven edges is the goal, so try not to make a uniform shape.
     Bake in a 300 degree oven, till the cheese becomes solid and crisp, but not browned.
     Set the cheese pan and cheese crisp aside.

     Shallot Home Fries:
     Heat a saute pan over medium/medium low heat.
     Add 1/2 tablespoon of vegetable oil.
     Add 1 pat of unsalted butter.
     Add 1/2 cup of diced potatoes
     Saute till the potatoes become halfway cooked.
     Add 3 or 4 slices of shallot.
     Saute till the potatoes become fully cooked and lightly browned.
     Season the potatoes with sea salt and white pepper.
     Add 1 pinch of minced Italian parsley.
     Keep the potatoes warm on a stove top.

     Smoked Bacon Cilantro Egg Recipe:  
     Heat a saute pan over medium/medium low heat.
     Add 1 tablespoon of finely chopped smoked bacon.
     Saute till the bacon bits become a light brown color and crispy.
     Place the bacon bits in a mixing bowl.
     Add two eggs.
     Add 2 pinches of minced cilantro.
     Whisk the egg mixture, till it becomes blended.
     Heat a non-stick saute pan over medium low heat.
     Add 1 pat of unsalted butter.
     Add 1/2 of the whisked egg mixture.
     Cook and scramble the egg, so it is loose and runny.
     Return the partially cooked egg mixture to the raw egg mixture in the mixing bowl.
     Note:  This technique of partially cooking half of the egg mixture will keep the bacon and cilantro from settling to the bottom during baking.  
     Brush a non stick silicone custard cup mold with melted unsalted butter.
     Set the silicone mold on a baking pan.
     Pour the egg mixture into the mold.
     Cover the eggs with a piece of parchment paper that has been brushed with melted unsalted butter.  Bake in a 350 degree oven.
     Bake till the eggs puff up and become fully cooked.
     The bratwurst n peppers can be cooked while the eggs bake!
   
     Bratwurst n Peppers:
     Heat a saute pan over medium/medium low heat.
     Add 1/3 cup of mixed green bell pepper and julienne red bell pepper strips.
     Saute till the peppers start to become tender.
     Add 2 ounces of thin sliced smoked bratwurst.
     Saute till the peppers become tender.
     Season with sea salt and black pepper.
   
     Crouton:
     Cut a round medallion of sliced bread that is the sam size as the silicone custard cup mold.
     Cit the medallion in half.
     Heat a saute pan over medium/medium low heat.
     Add 2 pats of unsalted butter.
     Grill the bread medallion halves, till they become toasted on both sides.
     Keep the crouton halves warm on a stove top.

     Sauce Indienne: 
     This is a quick reduction sauce that is easy to make.
     Place 1/2 cup of cream in a small sauce pot.
     Add sea salt and white pepper.
     Add 1 pinch of turmeric.
     Add 2 pinches of yellow curry powder.
     Place the pot over medium low heat.
     Simmer and reduce the sauce, till it becomes a medium thin sauce consistency.
     Keep the sauce warm over very low heat.

     Smoked Bacon Cilantro Eggs with Cheddar Scallion Crisp and Sauce Indienne with Smoked Bratwurst n Peppers and Shallot Home Fries:
     Place the crouton halves on the center of the plate.
     Use a ring mold to place the sliced smoked bratwurst n peppers on the plate.
     Sprinkle a little bit of oregano on the sausage.
     Remove the ring mold.
     Use the ring mold to place the potatoes on the other side of the crouton on the plate.
     Invert the silicone custard cup mold with the baked eggs onto the crouton halves.
     Remove the silicon mold.
     Cut a slit in the top of the baked eggs.
     Insert the cheddar green onion crisp, so it stands vertically.
     Garnish the baked eggs with cilantro leaves.

     Viola!  A pretty breakfast with plenty of great flavor.  Yum!  ...  Shawna
